Phoenix Oyster Mushroom
Pls join me as we welcome the newest addition to our product line…the not-so-humble phoenix oyster mushroom. Three months back we started growing out the mycelium in the lab and have progressed now to our first harvest.

As we sample our first harvest, we fried both the Phoenix and Rocky Top Blue Oysters in olive oil with a pinch of salt for a side by side taste test. Both hold their texture well when fried with the Phoenix possibly a bit firmer. As for taste, the Phoenix has a stronger earthier flavor when compared to the mild flavor of the Blue. I will enjoy using the Phoenix in tomato sauce dishes such as spaghetti as it will stand alongside the garlic and other spices. We have enjoyed the Phoenix in an onion & egg scramble. This is an Oyster Mushroom we will keep growing.
